How to make fluffy boiled icing

Meringue mixture

1. Meringue -3 tablespoons meringue powder

2. 1/2 cup cold water

Syrup

1. 2 cups granulated sugar

2.1.4 cup corn syrup

3. 1/2 cup water

Directions

  1. Beat meringue powder and cold water until stiff for about 4 minutes
  2. Mix sugar, corn syrup and water in 2 liter saucepan
  3. Bring to boil
  4. Cool slightly and slowly add corn syrup to meringue mixture
  5. Add soft gel paste
  6. Beat on high for 4 minutes
